This September, we are going for easy, healthy, and tasty recipes! This Bump Southwest Burrito Bowl is a fan favourite.  Our friends over at the Prairie Research Kitchen created this recipe for us. 

We like to think of this recipe as a "once around the fridge" sort of recipe. Cook up some Plant Enhanced Ground Beef, add ingredients that you already have from your fridge, top with pico de gallo, and voila!

Bump Southwest Bowl

 

Bump mixture directions:

  • In a small bowl, combine all the herbs, spices, and salt, and set aside.
  • Over medium high heat, add canola oil to a medium sized non-stick pan. Once oil is hot, add Plant Enhanced Ground Beef. Using a wooden spoon or spatula, break apart meat into pea sized chunks.
  • Add onions, garlic, and spice mixture and continue to cook until evenly browned and fully cooked, about 5 minutes. 

Seasoned Meat Mixture:

  • 1 package Bump Plant Enhanced Ground Beef
  • ½ tsp smoked paprika
  • 1 tbsp chili powder
  • 1 ½ tsp cumin ground
  • ½ tsp oregano
  • 1 tsp black pepper
  • ½ tsp chili flakes
  • 1 tsp salt
  • 1 tbsp canola oil
  • ½ cup onion, grated
  • 3 cloves garlic

 Pico de Gallo directions:

  • Mix all ingredients in a small bowl, cover, and refrigerate until required.

Pico de Gallo:

  • 1 cup fresh tomatoes, 1/8” diced
  • ¼ cup white onion, 1/8” diced
  • 3 tbsp lime juice
  • 1 tbsp Jalapeno, seeded, minced
  • ¼ cup cilantro, chopped
  • ½ tsp salt

Lime Crema directions:

  • Whisk together ingredients, cover, and refrigerate until required.

Lime Crema:

  • ½ cup sour cream
  • 2 tsp lime zest
  • 3 tbsp lime juice 

Assembly:

  • In the centre of a large bowl, scoop ½ cup of cooked quinoa (or any rice variation), top with 1/6 of the Bump seasoning.
  • Garnish to your liking – black beans, corn, cilantro. Other garnishes: Radish, pickled jalapeno, shredded lettuce, avocado, and grated cheddar cheese.
  • Enjoy!
